This vineyard is north-facing in a forest clearing and therefore a fairly cool site. Paetra has been working with great efforts to bring more biodiversity to the site and help revitalize the Willakenzie soil. The grapes are hand harvested to remove all but the driest botrytis, gently pressed and fermented in neutral oak where it was left Sur-Lie for 9 months before bottling. It was made without commercial yeast, acid, sugar, or chemical adds.
Aromatically the wine is yellow fruit forward, with notes of lemon zest, peaches, yellow apples, alongside notes of wildflowers and petrol. The palate is a touch sweeter and rounder, with stone fruit flavors and a finish of mouthwatering acidity.
