Made up of Xarel-Lo, Macabeu, and Parellada from the Can Castany and Can Prats vineyard within Sant Sadurni D’Anoia, Gelida, and Sant Llorenc, in Cava DO, the vines were planted between 1928-1940 upon beds of sandy limestone. The vines are planted to a south-eastern orientation and see entirely biodynamic viticulture practices. The sparkling wine is made methode champenoise, with a gentle press with 50% extraction of free-run juice. Each variety is fermented in small tanks at a controlled temperature. Secondary fermentation occurs in bottle, and the wine then ages for 60 months in bottle before release.
