Made from 100% Chardonnay, after harvesting the Brut Millesimato was pressed gently to 50%. The first fermentation occurs in stainless steel and is low and slow. The second is doing in bottle per its classic method. The wine is left for five years on its lees and comes out with a dosage of 5gr/L.
On the palate, this wine intense and surprisingly complex with tart pineapples, underripe mango, crushed white flowers, and a refreshing minerality.
