Made up of Hondarrabi Beltza, the grapes come from Ametz Mendi and a handful of other historic vineyards within Getaria of Getariako Txakolina DO. The vines were planted from 1915 to 2000 upon steep hillsides of sandy, chalky loam. The grapes are harvested by hand once at the winery go through another selection. This is followed by rose vinification at a controlled temperature. Maturation on the skin with the juice between occurs 12-15 hours before the fermenting at a controlled temperature in stainless steel tanks. The wine then ages for 6 months in stainless steel sur lie before bottling.
