Quadrum Red is a blend of Tempranillo and Garnacha, coming from vineyards within the La Mancha DO, which were planted between 1980-1995 upon sandy soils with limestone and red clay. The vines are sustainably dry-farmed, planted to high density trellises without irrigation or harmful fungicides, herbicides, pesticides, or chemically synthesized fertilizers.
The fruit is hand-harvested and the grapes undergo a brief cold-soak. The bunches are destemmed but crushed. Temperature controlled maceration and fermentation occur in stainless steel tanks with neutral yeast. The maceration is brief to avoid over-extraction, only 5-6 days. The wine is bottled young after a few months in stainless steel to preserve freshness.
