The inspiration for the 100% Chardonnay from the Sta. Rita Hills named, 'Inox' (French for stainless steel) hails from the pursuit to capture the essence of the vineyard as well as the variety to the core. The 1.8 acre block of clone 76 Chardonnay is planted upon a bed of sandy soils on the western side of Melville's estate vineyard in the Sta. Rita Hills. After a manual harvest, the grapes are pressed immediately and the juice is transferred into two small stainless steel tanks. The fermentation process lasts about three months at an average temperature of 45°F for two reasons, one to prevent any form of malolactic fermentation, and two so that the fruits delicate nuances are captured properly. The wine is left on it lees without any stirring for five months before bottling in late march.
Aromatically the wine lifts with notes of stone fruits, fresh coconuts, and light lemon balm. On the palate the wine is refreshingly complex with notes of sea spray, under-ripe kiwi, with an emerging flavor of fine floral flavors.
