This bottling is made up of Chardonnay, Pinot Noir, Gamay, and Aligoté, with an average vine age of 25 years and grows upon beds of clay-limestone. The grapes are hand-harvested and immediately gently pressed in a pneumatic press. Only the first press is used. Malolactic fermentation occurs in stainless steel vats. As soon as the base wine is created it is filtered and cold stabilized. Secondary fermentation takes place in the bottle thanks to added sugar and yeast. The bottles are aged from 12 to 18 months on wooden wine racks.
Aromatically the wine has notes of ripe, exotic tropical fruits as well as freshly grated citrus fruits. The palate the wine has a delicate, floral flavor as well as buttered pastries paired with fine bubbles.
