Most of the Cabernet Sauvignon for this bottling comes from Paso Robles. The growing season was marked by a cool spring and mild summer, with two late summer heat waves that quickened the pace of ripening into harvest. Crops were smaller than average, but quality was high with intense flavor development.
Grapes picked ripe at 24 brix and are destemmed directly to tank. They spend a 48-hour cold soak before fermentation, where 3 pump overs per day are performed for 10 days. The finished wine is aged for 10 months in a combination of neutral and new French oak barrels.
