This bottling is made up of Chenin hailing from the tiny Aparicio Vineyard in Amador AVA, where the fifty own-rooted, dry farmed, head-trained wines are going on 43 years of age. Upon harvest the grapes are pressed whole cluster to tank for one day of settling. They are then racked in barrique for unassisted fermentation to occur, before being left sur lie for 14 months. The finished wine is bottled without fining or filtration.
