VINEYARD Wirz Vineyard was planted to Riesling in 1965. Own-rooted, head trained and dry farmed in decomposed granite overlaying limestone at about 1000 ft elevation, this is a true California gem. The 40 acres of Riesling produce about one ton per acre. The head trained vines are little shrubs that produce small clusters with tiny berries. Farmed organically.
VINIFICATION Foot-trodden and then kept on skins for a couple days. Started spontaneous fermentation on skins and stems. Pressed to barrique where fermentation completed at the end of October. 100% Malolactic.
AGING Wine remained sur lie in barrels for 10 months, then racked to bottle in July 2016.
