100% Pinot Noir
"Les Jeunes Vignes" Sancerre rosé is produced from the saignée method where juice comes from draining ("bleeding") vats of fruit after 48 hours of cold maceration. The fermentation occurs in thermo-regulated tanks followed by 3 to 4 months of maturation on lees to add complexity. 20% of the blend comes from the Mont Damnés.
