The Sauvignon Blanc grapes come from a vineyard first planted in 1936 where the soil is predominantly Silex, flinty and rich in minerals. These vines produce very small yield, the juice ferments in a combination of barrels, ranging in 4, 5 and 6 years-old followed by maturation on very fine lees. It is bottled without fining and/or filtering.
Aromatically the wine has notes of lime, verbena, and that classic flinty characteristic that screams Silex soils. On the palate there are flavors of grapefruits, almond skins, white spring flowers, bracing minerality and a hint of coconut.
