VARIETALS: Blend of the most prized lots of Syrah, Cabernet Sauvignon and Merlot, which have been organically farmed in clay, limestone soils since the 2014.
FERMENTATION: Fruit is fermented with natural yeasts and blended in tank varying from 12 to 25 days and up to 30 to 35 days for exceptional lots to retain each grape's freshness and flavor. Daily pumpovers occur with the Cabernet Sauvignon and punch-downs for the Syrah.
AGING: The wine spends 12 months in old Dujac oak barrels and is bottled unfiltered.
