VARIETAL: 100% Viognier
VINEYARD: 25- to 30-year-old vines sourced from the clay, limestone soils of Provence.
FERMENTATION: The wine is fermented in temperature-controlled tanks. Some of the wine undergoes malolactic fermentation, while the remainder is blocked at an earlier stage to retain its freshness.
AGING: Elevage occurs in 100% stainless steel tanks for 6 months to preserve freshness. The lots are subsequently blended.
