100% Pinot Noir, Méthode Traditionnelle.
Chapel Block refers to the block named after the old country church nestled in the heart of the estate. Sourced exclusively from this block and produced in very limited quantities, this cuvée is made of 100% estate grown Pinot Noir grapes and is one of the few sparkling Blanc de Noirs produced in New Zealand.
The grapes were lightly whole-bunch pressed selecting only the finest portion of the juice which was then fermented in a stainless steel tank to retain fruit purity and finesse. The base wine was aged on fine lees for 10 months partly in stainless steel and old oak. Bottling (tirage) occurred prior to the following vintage. The wine was then stored in a cool cellar to allow a slow bottle fermentation and a second period on its lees. Disgorgement happens after 23 months of aging on lees (“sur lattes”).
