For the past three decades, the 'Signature' Cabernet Sauvignon has been the flagship of Chappellet. Most of the fruit hails from the famed Pritchard Hill, on vines growing upon the rocky hillside and produce small, intensely concentrated grapes. The crop is thinned in efforts to promote full, even ripening. The wine is a blend of predominately Cabernet Sauvignon, as well as bits of Petit Verdot and Malbec.
Aromatically the wine jumps from the glass with notes of ripe black cherries, cassis, fine dark chocolate, as well as oak-influenced espresso, cinnamon, and clove. On the palate, the wine is full of ripe dark berries, and black currants, with spicey lingering flavors of nutmeg, anise, and smoked cedar.
