VINEYARD Fruit is all estate owned and organically grown in the Valdeorras DO region of northwest Spain. Vineyard is located in the town of Larouco, which sits at 1,968 feet elevation. All fruit is hand picked.
SOIL Slate and granite topsoil with a thin clay subsoil.
VINIFICATION AND AGING Grapes are all destemmed and crushed. Unfermented juice macerates on the skins for 8-12 hours. Zero malolactic fermentation takes place. Wine is aged in stainless steel tanks.
