Named after the Atlantic western winds, Bodegas Poniente embodies the traditional styles of sherry-making. The 100% Palomino Fino grapes hail from the following organically farmed estate vineyards within Pago Añina of Jeréz Superior: San Cristóbal, San José y El Aljibe. The region is known for its extreme sun exposure as well as sea-air influence. This Amontillado comes from a system of six criaderas and one solera, whose age averages at over 40 years. The wine used to refresh the sixth criadera comes from organically farmed vineyards and has a median age of 10 years. Unlike others, this Amontillado has not been fortified prior to its entry into oxidative aging, but instead gradually transitioned into the oxidative aging phase of its life thanks to a gradual depletion of flor-sustaining nutrients creating a slow but steady concentration of the wine.
Aromatically this amontillado is full of oxidative notes such as damp woods, white balsamic, dried herbs and iron. On the palate the wine is extremely salty, and bone dry, with flavors of seaweed, almond skins, and sea air.
