Fruit exclusively from the estate’s oldest single vineyard site “Mattia”, which is named for Valter’s son.
Harvest begins with meticulous hand selection of ripe bunches. The grapes are destemmed and placed into stainless steel
tanks with large bases in order to promote extraction of color and sweet tannins through frequent punchdowns. After
fermentation, the wine matures on the skins for 2 weeks. The wine ages in French oak barrels of varying size for 3 years
and then in the bottle for an additional 6 months.
