Harvesting the fruit at different stages of ripeness (i.e. phased picking) plays a critical role in producing the Fig Tree Vineyard Sauvignon Blanc. A mix of whole cluster and destemmed fruit is used and skin contact is kept short. Fermentation is done in stainless steel (50%), neutral French oak, and acacia wood barrels. The wine is then aged on the lees for four months.
