"The 2013 Cabernet Sauvignon Les Pavots, which is their proprietary red wine blend from Knights Valley, is a killer effort, and one of their all-time greats, ranking right up there with the 2007 or 1997. A blend of 69% Cabernet Sauvignon, 21% Cabernet Franc and the rest Merlot and Petit Verdot, there are 3,600 cases of it. The wine displays plenty of mocha, chocolate, blackberry, creosote and charcoal in an incredibly complex fragrance. Full-bodied and opulent, it shows, loads of tannin, a hint of unsmoked cigar tobacco and plenty of black and blue fruits. Opaque purple to the rim, this wine is in need of a good 5-6 years of cellaring and certainly has 30-40 years of life in it. -RP"

Fruit is grown on the slopes of Mount St. Helena in Knights Valley. The Rocky hillside consist of rhyolitic soils created through volcanic activity from a millennia ago, which contributes to the wine’s mineral richness and complexity. Spanning 49 acres, Les Pavots ascends to an elevation of nearly 1,400 feet. Merlot and Cabernet Franc grow on the cool upper slopes and Cabernet Sauvignon grows just below.

The wine is aged 18 months in 100% French oak barrels from artisan coopers. It is bottled unfined and unfiltered. The name translates to “The Poppies” and is named after the California poppies that grow wild on their estate and are the inspiration for the winery’s logo.

2013 Vintage
The 2013 growing season began with a dry spring and mild temperatures, very similar to the previous vintage. Bloom occurred evenly under excellent conditions, setting an ample crop. With the exception of one heat spike in late June, temperatures were consistently optimal, resulting in notably healthy vines. Meticulous canopy management and substantial crop thinning brought the vines into perfect balance. From veraison to the harvest, a long Indian summer contributed to the exceptional quality of the vintage. Sunny days, followed by cool evenings allowed for even, slow ripening. No rain or large heat spikes made for berries with amazing fruit intensity and a classic varietal profile.
