2015 Paul Hobbs Pinot Noir Russian River
Paul Hobbs Winery

VINEYARD: Katherine Lindsay Estate, Ulises Valdez, Fraenkle, Schell Ranch Estate, Walker Station.

FERMENTATION: Fruit is hand-harvested, picked at night and hand-sorted while still cold from the field. It uses 8% whole cluster with a 5-day cold soak and 16 day maceration. The wine is fermented in small, open-top stainless steel tanks using indigenous yeasts.

AGING: Gentle punchdowns and pumpovers take place, and the wine ages 11 months in French Oak barrels (43% new). Spontaneous malolactic fermentation occurs in barrels.
