Above all else, the Bodega Headlands deftly balances tension and fruit intensity. A burst of sweet red cherry, blood orange, mint and raspberry jam infuse this beautifully layered, nuanced Pinot Noir. Bright saline notes punctuate the super-expressive finish. 2015 Occidental 'Cuvée Elizabeth' Pinot Noir Bodega Headlands

The grapes are carefully sorted before and after de-stemming, leaving a high percentage of uncrushed whole berries in each fermenter. Native yeast fermentations begin in 7-8 days and proceed to dryness in less than 3 weeks. To ensure a gentle extraction, peak temperatuers seldom reach 85 degrees F and the number of punch-downs is kept to a minimum. After fermentation, the wine is transferred to French oak barrels (25% new) to age in a cold underground cellar. Native malolactic fermentations usually begin by the end of the year and are complete by late Spring. THe wine remains unracked until November when it is moved directly to bottling tank and bottled unfined and unfiltered with a minimum SO2 level.
