"The 2014 Sálvora is also Albariño, in this case from a very old vineyard, Finca O Torno, planted over a century ago with un-grafted vines on fragmented granite, sand and chalk soils that was initially used for Leirana from Forjas del Salnés. It fermented in oak barrels where it matured for one year and didn't go through malolactic. The nose shows sharp, mineral and austere, a little closed and backward, serious, and it just made me think of a lean, sharp and mineral palate, which is exactly what I found; it has an electric sensation combining the cold, vertical austerity of the granite and the sapidity of the limestone. I bet this will evolve magnificently in bottle. 2,000 bottles produced."

Salvora is the name of an island in Rias Baixas. The wine is produced from a single vineyard within the village of Meano, Salnes subzone, planted in 1905.

Salvora is fermented and aged in big old vessels of 600 liters for 12 months before bottling. During the entire process of vinification and ageing this wine is not chilled. 100% of the yeast here is indigenous and the wine does not undergo malolactic fermentation.

This is the way Albariño has always been made until the beginning to the 1980's when stainless steel technology was implemented by all wineries - something that makes this wine even more special.

Only 333 cases of 6 bottles produced for the entire world.
