This exceptional Pinot Noir is a collection of various clones all from Melville's Sta. Rita Hills estate. Roughly half of the fruit is fermented as whole clusters with the other half gently destemmed in small (1.5 ton) open-top fermenters. Total skin and stem contact averages 30 days (seven day cold soak, two weeks of fermentation and one week extended maceration). From the press, the wine is transferred directly into neutral French oak barrels where it remains sur lie without sulfur until June, when it is gently racked and prepared for bottling in August.
