The grapes come from a vineyard planted in 1936 where the soil is predominantly flint. As a tribute to the ancient methods of Sancerre, the D'Antan is made without fining or filtration. Fermentation occurs in 4- to 6-year-old oak barrels followed by maturation on the lees. Only two rackings are carried out according to the lunar cycle before bottling.
