85% Sauvignon Blanc 15% Chardonnay

VINEYARD Between the Loire River and the Sologne, the area of production extends over a surface of only 574 ha. Strongly marked by the erosion of the Loire (erosion and deposit of terraces), the geology of the production area of Cheverny is rather original compared with the other appellations of the Loire Valley. Vines average 20 years old.

SOIL Dominant sandy soils or soils developed on calcareous substratum.

VINIFICATION AND AGING Grapes undergo a pneumatic pressing after a short maceration. Settling of the juice for 48 hours, then fermentation in thermoregulated stainless steel tanks for 10 days. The wine evolves on its fine lees for a couple of months of maturation before bottling.
