Whole berry destemmed into open-top fermenters; 4-day cold maceration. Fermentation takes 14 days, with punch downs 2 times daily. Aged for 20 months in large format French and Hungarian oak puncheons, 45% new. Racked twice and bottled without fining or filtration.
