Enhanced by the creation of the DOC Vin Santo del Chianti Classico, today Badia a Coltibuono’s Vin Santo is one of the best dessert wines in the world. The bunches of Trebbiano and Malvasia grapes destined specifically for the production of the Vin Santo grow in a specially planted vineyard. They are then carefully selected and left to dry in well-ventilated rooms. Fermentation and aging take place in small oak casks, which are sealed and kept exposed to the seasonal variations in temperature for four years. Candied fruit, citrus, apricot, and dried figs are the dominant notes. Vibrant acidity balances the sweet, unctuous notes.
