"Quite firm and unusually austere for a 2015, Graillot's 2015 Saint Joseph needs about 5 years of cellaring. It does offer fine, mineral notions of crushed stone and wonderfully vibrant cassis, so it should blossom in time, but right now, this full-bodied wine is just backward and tight."

The family owns 22 ha of vineyards made up of 30-year-old vines in Crozes-Hermitage that are planted on well-drained, flat alluvial plains between the Rhône and Isère Rivers and two small parcels of 12-year-old vines in St. Joseph planted on hard, granite slopes. Traditionally, wines from St. Joseph are at least 90% Syrah, while Marsanne and Roussanne compose the remainder.

The grapes are sourced from two parcels in St. Joseph: 40-55% of fruit from the St-Jean-de-Muzols (planted in 2003) and 45-60% from the Saint-Désirat (planted in 1988). Most of the grapes are whole cluster fermented, with de-stemming primarily occurring for the Saint-Désirat bunches. Each vineyard is fermented in separate tanks. The juice is pumped over and punched down according to winery practices.

The wine is aged in 5-10% new oak and 90% in 1-6 year old casks, for 12 months. The wine is un-fined and filtered.
