Haunting, vivid, rose-petal hue with salmon lights and a hint of copper. Subtle, enveloping effervescence. A gorgeous melange of redcurrant, strawberry, citrus, then fresh figs, peach, and (would you believe) macaroons. Ample, generous, a whiff of cedarwood. Exciting matches like saddle of veal, lobster Armoricaine, or poulet de Bresse aux morilles come to mind."

"The 2006 Rosé Cuvée Elisabeth Salmon is powerful, intense and also classically austere in its make up. Crushed flowers, mint, red berries and cranberries are all finely sketched. The 2006 finishes with striking mineral-driven precision, and while it doesn't have the opulence or exuberance of the 2002, it is still a very pretty and appealing Champagne. The Elisabeth Salmon is 50% Pinot Noir and 50% Chardonnay, with about 8% still Pinot Noir. Dosage is 6 grams per liter."

50% Pinot Noir
50% Chardonnay

Cuvée created in 1988 as a tribute to the co-founder. Most of the Pinot Noir comes from Ambonnay, due to its older vines (50 to 60 years old). Between 8% to 10% of additional Pinot Noir is added during vinification as a red wine to add color. 20% of the blend is fermented in barriques, and the cuvée ages 10 years on the lees before release.
