"Officially this is Non-Vintage, but it is in fact a pure 2007. Beautiful, radiant yellow; crystalline, superfine mousse; terrific fine lemon and orchard fruit scents. The palate confirms, with a creamy texture but also a bracing vivaciousness. End notes of brioche, finely ripe. Chardonnay in charge. Virtuoso use of oak."

"Equal parts of chardonnay, pinot noir and pinot meunier with one-third reserve wine, the oak influence here is one of compressing and containing the fruit. Deeply spicy with marmalade, very ripe apricot fruits, berries and red plums. The finish is fresh with pastry, spice, citrus rind and glacé fruits – think panettone! Based on 2009 harvest. Drink now."

NV Billecart-Salmon Brut Sous Bois

1/3 each of Chardonnay, Pinot Noir, Pinot Meunier

Launched in 2010, this unique cuvée is both 100% fermented and aged in neutral oak barrel at a low temperature. Each variety ferments and ages separately in 6- to 12-year-old light to medium toasted barriques from Burgundy for a few months with the Pinot Meunier and up to 8 months for Pinot Noir and Chardonnay followed by 5 years aging in bottle. The cuvée is a blend of four vintages.
