"Vivid straw-green with a steady stream of small bubbles. Drop-dead gorgeous Prosecco with white peach, nectarine, honey, anise, chamomile, vanilla and flint only some of the many aromas and flavors that open up with aeration, lending this deep, luscious (20 g/L residual sugar and 6 g/L total acidity), almost chewy Prosecco an irresistible exotic, complex touch. Best Asciutto Prosecco of the year (it was previously labeled as ‘Dry’, but Adami has reversed to the old moniker of Asciutto). In fact, in 1933, this wine was presented at the First Traditional Wines Exhibition of Siena as ‘Riva Giardino Asciutto’; historically, it was one of the first, if not the first, single vineyard Prosecco made."

The Vigneto Giardino Valdobbiadene Prosecco Superiore Rive di Colbertaldo DOCG, family-owned since 1920, is the finest estate vineyard. The site sits on a steep, south-facing slope with clay over calcareous rock, low-nutrient, and well-drained soils - Ideal for the production of quality Prosecco.

Light pressing with bladder press
Settling of must
Temperature controlled fermentation
3 months on lees in stainless steel
"Metodo Italiano" or Charmat method for secondary fermentation in steel pressure tanks in order to preserve the aromas of the grape and develop the typical frutiness
