Domaine Leflaive
Puligny-Montrachet, Burgundy, France

With an astounding 25 hectares to their name, Domaine Leflaive is the single largest owner of grand cru and premier cru vineyards in Puligny. Indeed, both Leflaive’s holdings and its legacy are awe-inspiring. For over 250 years, the domaine has been passed down through members of the Leflaive family, and in 1990, the domaine was handed over to Vincent Leflaive’s daughter, Anne-Claude.

Aided by Pierre Morey, Anne-Claude revolutionized the domaine - most notably by introducing a biodynamic regime in the vineyards and cellars. Upon Pierre’s retirement in 2008, Eric Rémy (previously at Chateau Genot-Boulanger) stepped up to take on the role of winemaker. As a result of her commitment to biodynamic practices, Anne-Claude has brought a spirit of re-evaluation and research to all aspects of the domaine. Nowhere is this more evident than in the vineyard, where conventional treatments of diseases and other problems have been entirely replaced by biodynamic principals. According to Anne-Claude, the results have been indisputably positive for both the long-term health of Leflaive’s precious vineyards and for the quality of its wines. She notes that since the employment of biodynamic methods, the wines have shown “greater precision” in their taste and better reflect “the image of terroir”. Additionally, the vines undergo a strict green pruning each summer - a painful process, but one that Anne-Claude believes is necessary to maximize the concentration of flavor and sugar in the bunches.

In the cellar, the domaine has an almost fanatic policy for putting only the healthiest of fruit into their three pneumatic presses. Once pressed, the juice is left to settle for 24 hours before being transferred to barrel where it will ferment using only indigenous yeasts and is rarely chaptalized. Fermentation takes place in large wooden foudres for the Bourgogne Blanc and small casks for the Pulignys. The percentage of new French oak increases with the quality and richness of the wine. Additionally, the amount of bâtonnage has been reduced over the past couple decades, from twice daily to a max of twice per week. This infinite care to obtain the best fruit possible combined with an obsession for hygiene, gentle handling, and hiring top-notch team members is how Leflaive is able to consistently produce some of the most remarkable wines in the world.
