Patrick Mata's ancestors have been producing this artisanal Spanish vermouth for over a century. The Mata Vermouth is now made in the northern Spanish province of Bierzo.
VINIFICATION AND AGING Considered a 'French' style vermouth. Aged for about 18 months with various roots, flowers, and savory herbs. The exact blend is a secret, but some of the most prominent botanicals are dry chamomile, clove, vanilla, and turmeric. After maceration, it is filtered and slightly fortified. Wine spirits and grape must are added for mouthfeel.
