Amaro (meaning "bitter" in Italian) is a variety of Italian herbal liqueur, commonly enjoyed as an after dinner digestif.
Sangiovese raisins are partially fermented, then neutral grape spirit is added, along with herbs from Doug's garden (sage, thyme, marjoram, parsley, lemon verbena, rosemary and mint), bark, roots, dried orange peels and caramelized simple syrup. It is aged for a year in cask outside the winery between the sink and sorting table before bottling. It reaches 23% alcohol by volume.
