VINEYARD: La Encantada Vineyard, located in the Santa Rita Hills, north of Santa Barbara. The climate is influenced both by the ocean's chill and its moderating effects, which makes it an ideal location for Burgundian varieties. The wines from here have the potential for deep acidity and mineral tension, revealing what critics say is "California's next great terroir."
FERMENTATION:100% whole berry destemmed into small, open-top fermenters with a 10-day active fermentation and manual punchdowns twice daily.
AGING: The wine spends 16 months in 100% French oak (1/3 new) and is bottled without fining or filtration.
