Varietals/Clones: Merlot – Entav 181, Cabernet Franc – Tinaquaic
100% whole berry destemmed into small lot fermenters where each lot cold macerated for 3-5 days. Various yeasts with good fermentation kinetics with Happy Canyon Bordeaux varietals. Fermented for 15 – 21 days, with pump-overs twice daily. Aged in 22 months in French oak Taransaud barrels; 44% new. Bottled without fining or filtration.
