'Fornace' is Selvapiana's Super Tuscan, made up of mostly Cabernet Sauvignon and Merlot in equal parts, with the remainder Cabernet Franc. The grapes hail from the Fornace and Casanova vineyards in Rufina and grow upon beds of dry, stony clay and limestone. The wines ferment in stainless steel at 28°-30°C, with all-natural yeasts. Fermentation and maceration last for 25 days. Malolactic fermentation takes place immediately after the alcoholic. The wine is then aged in French oak barriques for 29 months.
Aromatically there are notes of brambly currants and red berries, as well as baking spices, and tobacco. On the palate, the tannins are classically chewy as well as dusty, with notes of tart red berries, smoked meats, and cedarwood,
