50% Trebbiano, 30% Passerina, 20% Pecorino
VINEYARD The vines are grown on silt and clay, rich in stone moraine,with a south-west exposure; 200 m. above sea level. Guyot system with 4400 vines per hectare.
VINIFICATION The grapes, harvested and selected by hand, must be submitted to soft pressing followed by a cold static decantation for about 18 hours. The wine is fermented and aged in stainless steel on its lees, and undergoes no malolactic fermentation.
