VARIETALS 70% Pinot Noir from the Grand Crus of Montagne de Reims & 30% Chardonnay from the Grand Crus of Côte des Blancs

VINIFICATION The first clarification process (débourbage) is followed by a second chilling of the must, which separates the courser lees. Each parcel, terroir and varietal is then fermented separately before blending. 30% of the wine is vinified and aged up to 7 months in barrels. 70% of the wine goes through malolactic fermentation. Aged for 6-7 years.

Extra Brut Dosage: 4g/l.
