This rosé is a personable blend of six different varietals hailing from eleven separate vineyard sites within the Central Coast. The wine holds an extremely distinctive nose, due to its extended skin contact. The élevage occurs in five-gallon demijohns on lees before being bottle sans filtration. With a bold, almost salty aroma, the palate is filled with tart red fruits such as strawberry and rhubarb, zesty pink grapefruit, a touch of cassis and a surprising bit of astringency. It is recommended to not drink this wine too cold.
